Learning to grill

I spent countless hours with my dad watching him grill as I was growing up.  I noticed what he did that made it taste great, and I paid attention when something he did didn't turn out so great.  I was his little grilling assistant.  That's just how I learned.  Then I made my own mistakes.

That's fine when it's just burgers that you're practicing on.  But when you get into more expensive cuts of meat, you want to make sure you can handle the grill.  The last thing you ever want to do is overcook a filet or pull a piece of salmon before it's done.  Those things, when done correctly, can take an everyday dinner and make it an experience.

Choosing what to grill

The first thing you need to do is to come up with a plan.  What do you want to grill?  What do you need to do to prepare that thing?  Does it need to be marinated?  Should I soak it?  How long does it have to cook?  Ask all of these questions the day before you plan to grill.  That way, you don't have hungry guests waiting for food when they come over because you didn't have time to prep the food correctly.
